Chef of New York Govenor's Mansion Waffle Recipe

The Suffern Farmer's Market is always a beehive of activity with the freshest seasonal produce making it's way to the 'A' lot each Saturday from 9:00am to 1:00pm. There are activities for the entire family with a different local entertainer on hand playing a wide array of music.
A few weeks ago, Noah Sheetz, the Executive Chef of the Governor's mansion was in Suffern once again. If you recall, during his last visit he prepared Chilled Curried Zucchini Soup.
This time he was making waffles from scratch, topping them with whatever fresh fruit the farmers' market volunteers presented him with. Cherries, strawberries, peaches, apples, Chef Noah never missed a beat. He chopped them up and tossed them into the pan resulting in an interesting combination of flavors. It didn't end there, using Creamy Maple Spread supplied by one of the vendors, Chef Noah mixed it into freshly whipped cream to top the fruit laden waffles.
Chef Noah always invites children to help out and this visit was no different. They mixed the waffle batter, stirred the fruit and made whipped cream.
The waffles were excellent in their own right but in this instance, they served as a delicious delivery mechanism for the fresh fruit compote topped with the maple cream.
Chef Noah was kind enough to share the recipe for the waffles. The freshest fruit and the Maple Cream is available from the vendors at the Suffern Farmers' Market. We've only got about two months of the Farmers' Market left so enjoy the bountiful harvest from local growers while you can.
